Fish Tacos in 15 Minutes

A quick update with another quick recipe. As I mentioned last time I’ve been hella busy lately, but hopefully things are calming down enough for me to get back on schedule soon.

My fish tacos taste fantastic, even if I do say so myself.

Ingredients:

> 1 x chopped onion

> 1 x tablespoon of vegetable oil

> 1 1/2 x teaspoon of paprika

> 1 x teaspoon of cayenne pepper

> 3 x crushed garlic cloves – or use puree

> 2 x boneless white fish fillets – tilapia are my favourite for this

> 1 x handful of chopped parsley

> 1 x handful of chopped basil

> 1 x punnet of cherry tomatoes, quartered – or use a tin of regular chopped tomatoes if you’re low on spoons

> salt and pepper to taste

> taco shells

Method:

> Add oil and chopped onion to a wok or frying pan and heat until onions are browned.

> Add in the garlic, herbs, spices, and tomatoes and stir fry for a couple of minutes.

> Put the fish fillets in the pan, stir fry until the fish are thoroughly cooked and flaked into the mixture.

> Once taco filling is cooked add to a bowl and serve with a spoon so that people can help themselves to fill their taco shells.
