Too many of the inhabitants of the blogosphere seem to be miserable this week, and I don’t like it. So I’m hosting a tea party to try to cheer everyone up.
If you want to join in, it’s easy. All you need to do is bake a cake like the one above – here’s the recipe!
Ingredients:
For the cake –
- 175g/6oz self-raising flour
- 175g/6oz castor sugar
- 175g/6oz butter
- half a cup of cocoa powder or powdered hot chocolate – if you have both, that’s even better
- 3 free range eggs
- liberal quantities of chocolate chips
- 2-3 tablespoons of milk
- 300ml double cream
And for the topping –
- 100g of solid chocolate of your choosing
- 30g butter
Method:
Step 1. Heat your oven to 180C/160C/Gas Mark 4.
Step 2. Add all the ingredients that except those for the topping together in a bowl and beat them into a cake mixture.
Step 3. Divide the cake mixture evenly between two greased sandwich tins then place the tins in the oven to cook for 25 minutes.
Step 4. Remove tins from oven, tip cakes onto a wire rack and leave to cool completely.
Step 5. While the cakes are cooling whip the cream – if you do this by hand how long it takes is directly proportionate to how aggressive or irritable you’re feeling – then use the cream to sandwich the cakes together.
Step 6. Next melt the butter and solid chocolate in a pan, when it’s sufficiently runny use it to cover the top layer of the cake.
Step 7. Leave topping to set.
Once your cake is finished cut yourself a huge piece and pour yourself a cup of tea.
Then sit down. Stick on an old episode of the Gilmore Girls – or anything really, so long as it’s feel-good TV. And relax.

It’s the fine, light brown sugar. And according to wikipedia it’s not called castor sugar anywhere except the UK. Didn’t realise that, sorry! It suggests that it’s also known as baker’s sugar or extra fine sugar if that helps.

What a sweet idea. I’m gonna pass on baking because its stupid hot where I live and even with the a/c I refuse to turn on the oven. Instead, I am gonna have that cup of tea and feel good tv. Thanks for making me smile.
